Your personal sphere of play:
Your future place is at the Institute for Physiological Chemistry. You will join the research group of Marc Pignitter, where you will find excellent opportunities for research in food chemistry and sustainable food systems. The food industry today generates significant quantities of waste and by-products, which can be converted into valuable ingredients with exceptional techno-functional, nutritional, and biological attributes. This process contributes to a more circular economy. The institute is part of the Faculty of Chemistry and has access to various core facilities.
Your future tasks:
You will actively participate in research, teaching, and administration, which includes:
- Participating in research projects focused on food chemistry and the monitorization of oxidative processes and other relevant chemical reactions in food.
- Supervising and training PhD, master, and bachelor students in analyzing the impact of different food practices and processing techniques on the quality and safety of food products.
- Performing emerging extraction techniques for biological macromolecules such as lipids, proteins, and carbohydrates from different food matrices.
- Engaging on the optimization of methodologies for the analysis of novel quality markers, with special focus on mass spectrometry and nuclear magnetic resonance techniques.
- Identifying potential new markers via structural elucidation.
- Supporting the application process for projects and securing third-party funds.
- Independently conducting courses, primarily in the field of food chemistry, within the scope of the collective agreement provisions.
- Taking on administrative tasks in research and teaching.
This is part of your personality:
- Completed doctoral/PhD study in chemistry or a similar field with a focus on analytical food chemistry and lipid oxidation.
- Demonstrated research competence and initiative through international publications in peer-reviewed media and contributions in international conferences in the field of food chemistry.
- Expertise on the use of analytical techniques used in food chemistry, with a special focus on mass spectrometry and nuclear magnetic resonance.
- Knowledge and research experience in the monitorization of relevant chemical reactions during food processing, such as oxidative processes (lipid oxidation, protein oxidation) and the Maillard reaction.
- Expertise on data analysis with R or Python tools. Experience in processing of targeted and untargeted mass spectrometry datasets, ideally in the field of lipidomics or other omics sciences.
- Didactic skills and experience in academic teaching, preferably in food chemistry.
- Experience in co-supervising master students.
- Excellent knowledge of English; German language skills are desirable.
- A team player with high social and communicative skills.
